Manuel harvest • Strict selection of each grape by hand.
Fermentation
Destemming, followed by a long fermentation in open wooden vats for 18 days before a pneumatic press. No pumping and by gravity, the wine is transferred into oak barrels.
Ageing
Maturation in oak barrels at 100% with 20% new oak barrels during 14 months.
