Grapes are pressed, de-stemmed and through an exchanger cooled to a temperature of 12 ° C. Soft squeezing. The free-run must obtained, after a first decantation, is fermented at a temperature of 18 ° C. Long stop of the wine on the lees, up to bottling.
Straw yellow with greenish highlights.
Intense and persistent with notes of pear and white flowers followed by citrus and grassy notes.
Dry and fresh. The high acidity is persistent but pleasant well balanced by a warm sensation.
Food pairing and serving
A classical wine for fish dishes, ideal for grilled sea food and fish soup; but also, with Mediterranean style baked fish. Excellent as aperitif.
Best served at 8-10°C
