“Paolo Cottini” is the brand name with which Paolo and Sara want to connect their personal identity with the wines they produce.
The winery, located in Fumane, is a new “wine reality”, but Paolo Cottini’s family has long been associated with this passion; this is in fact the third generation involved with Silvano, Paolo’s father, who teaches his son the art of producing quality wine.
The vineyards are located in two parts of historic Valpolicella, in the Negrar Valley, exactly in Ca ‘del Gallo, at an altitude of about 580 meters. facing southwest and the Valgatara area, at an altitude of about 250 meters. on the southeast. This decisive differentiation in topography and altitude leads to quality grapes with distinctive and unique characters that, combined in different proportions, bring our wines to life.

Valpolicella has been an important wine-producing area since Roman times, and the grape varieties grown there are so rooted in the land that it is difficult to grow elsewhere.
Valpolicella’s production area grew in the late 1960s when it was awarded DOC status, resulting in a dramatic seesaw of quality and quantity that lasted about 40 years. The prices achieved by Valpolicella wines reached their lowest point in the 1970s and 1980s, when the low price paid per kilo of grapes led to more quality-oriented producers, particularly in the finer Classico and Valpantena zones , left their vines completely. This increased the percentage of Valpolicella coming from the poorer locations, and the downward spiral continued, but was halted by a sudden spike of interest in Amarone della Valpolicella in the 1990s.
