A sparkling champagne with a pleasant balance between ripe notes and acidity.

The estate is located in Balnot sur Laignes (45 km from Champagne’s historic capital, Troyes) and next to Les Riceys, the largest champagne-growing municipality and the only one producing the region’s third AOC (controlled designation of origin), Rosé des Riceys.
With an area of ​​40 hectares, most of our vines are planted in an area called Côte des Bars. 75% of the vines are Pinot Noir planted in limestone clay soil on steep, sun-drenched hills, bringing out the full and fruity flavor of this grape variety.

The first step in the vinification process is pressing freshly cut grapes. Only 2,550 liters of sweet juice can be extracted from every 4000 kg of grapes. Gremillet Champagnes come exclusively from the first pressing, which is of the highest quality and which we call “cuvée”.
Once in barrels, alcoholic fermentation takes place, with the juice slowly dissolving and turning into wine, before the decantation process, which separates the wine from the sediment and leaves a clear wine with a delicate aroma.
